Chicken korma is a classic Indian dish that features tender chicken in a rich and creamy sauce. Ingredients:
- 1 1/2 lbs chicken breast, cut into required shape .
- 1 cup plain yogurt
- 1/2 cup heavy cream
- 2 onions, chopped
- 3 cloves garlic, minced
- 2-inch piece of ginger, peeled and grated
- 1/2 cup raw cashews
- 2 tbsp vegetable oil
- 1 tbsp ghee or butter
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt, to taste
- Chopped fresh cilantro, for garnish


Instructions:
- In a blender, puree the yogurt, heavy cream, onions, garlic, ginger, and cashews until smooth.
- In a large pot or Dutch oven, heat the vegetable oil and ghee over medium-high heat. Add the cinnamon stick, cardamom pods, and cloves and cook until fragrant, about 30 seconds.
- Add the chicken and cook until browned on all sides, about 5 minutes.
- Add the pureed yogurt mixture, coriander, cumin, turmeric, cayenne pepper, and salt. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes or until the chicken is cooked through and the sauce has thickened.
- Taste and adjust the seasoning as needed.
- garnish with chopped cilantro & served with hot bread or rice.
