Ingredients:
- 1 cup split yellow lentils (moong dal)
- 2 cups water
- 1 cucumber, peeled and chopped
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
- 2 tablespoons chopped cilantro for garnish
Instructions:
- Rinse the lentils in until it runs clear. soak it for around 20 mins.
- Drain the lentils and add them to a pressure cooker along with 2 cups of water. Cook for 3-4 whistles or until the lentils are soft and cooked.
- In a pan, heat oil over medium heat.Add cumin & mustard seeds until it turns brown.
- Add chopped onions and minced garlic and sauté until the onions turn translucent.
- Add the chopped cucumber and sauté for a minute or two.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add boiled lentils in a pan.
- Simmer for 5-10 minutes until the dal thickens to the desired consistency.
- Garnish with chopped cilantro and serve hot with rice or roti.
