Walk down any street in North India and you will find vendors stocking up with street items such as Aloo Chaat, Papdi Chaat or the famous Dahi Bhalla Chaat. These are easy to prepare and loved by all. Straight from the streets of North India, chaat is now famous the world over. It is believed that the chaat was born in the royal kitchen of Emperor Shah Jahan.
From Raj Kachori, Bhel Papdi, Dhahi Bhalle to Paani puri, Papdi Chaat and Sev puri, all popular Indian street foods have had a major influence on the versatile chaat. Of course, every corner has its own creativity.

Papdi Chaat:

Ingredients:
For the papdi:
- 200 gram maida
- 40 gram oil
- to taste salt
- 1 tbsp ajwain
- For deep frying oil
- For the khatti chutney:
- 1 cup coriander leaves
- 1/4 cup pudina leaves
- 1 green chilli
- 20 gram ginger
- 1/2 tsp black rock salt
- to taste salt
- 1/2 tsp garam masala
- 1 lemon (juiced)
- For the meethi chutney:
- 200 gram tamarind/tentul pulp (soaked in 1 1/2 cup water)
- 800 gram sugar
- 3 tsp kachri powder
- 1/2 tsp saunth powder
- 1 tsp degi mirch
- to taste salt
- 1/2 tsp black rock salt
- 1/2 tsp garam masala combine with black cardamom, zeera, laung
For the dahi:
- 2 cups yogurt
- 2 tbsp sugar, powdered
- For the chaat masala:
- 2 tsp peeli mirch
- 1 tsp kali mirch
- 2 tsp jeera powder
- 2 tsp garam masala
- For garnishing:
- pomegranate seeds
- Sev
Procedure:
Prepare papdi:
- Mix maida, salt and ajwain in a bowl.
- Add oil. Knead together the flour and oil.
- Form the dough into small balls. Roll them like pancakes.
- Fry these meat sauces on low heat until golden brown.
To prepare meethi chutney:
- Soak tamarind pulp in water for 25-30 minutes. Squeeze it with your hands to extract all the pulp. Strain and discard the residue in the filter.
- Put tamarind water in a saucepan and add sugar. Cook over low heat until the sugarmelts. Let it cool.
- Once it cools down, add kachoori owder, saute powder, chilli flakes, salt, black salt and garam masala.
- Your meethi chutney is ready.
To prepare dahi:
- Whisk yogurt with some powdered sugar. Put it in the cold place.
To prepare chaat masala:
- Mix all ingredients together.
Plating:
- Serve bhallas on a plate. Break it up slightly in the middle.
- Add sweet tofu, khatti chutney, meethi chutney.
- Garnish with pomegranate and sev.
- Sprinkle it with some chaat masala.
- Serve.

Fried Aloo Chat:
Fried crispy hash browns from the streets of Old Delhi. Added to a tangy tamarind and mint chutney, this fried aloe vera salad is a must-try.Crispy fried potato cubes seasoned with spice powder, sweet and sour dates and tamarind sauce, finished with coriander leaves and crunchy pomegranate seeds.
Ingredients:
- 2 Medium potatoes (peeled and cubed), boiled
- 1 onion, chopped
- 1 Green chili
- Handful of fresh coriander leaves
- 4 tbsp fresh tamarind chutney
- 2 tbsp hot mint chutney
- 1 Lime
- 1 spring onion
- A pinch of chaat masala
- to taste salt
Procedure:
- Fry the boiled potatoes until golden and crispy, absorb excess oil with absorbent paper and put in a bowl.
- Add the chopped onion, green pepper and coriander leaves. Then add tamarind and mint chutney.
- Squeeze lime juice, add Indian curry powder, shallot and season with salt.
- Mix all the ingredients well.
- Serve hot or warm in a small bowl.

Paneer Chat:
A sweet, sour and spicy chutney with minty and spiced paneer.Eating cheese every day is fine, as long as the intake is moderate. Ingredients:
- For the chutney:
- 100 gm slit green chillies
- 3 Tbsp roasted ground sesame seeds
- 3 Tbsp grated jaggery
- 150 ml thick tamarind pulp
- 1 tsp chilli powder
- 1/4 tsp turmeric powder
- 2 tsp salt
- 5 Tbsp sesame oil
- 1/2 tsp mustard seeds
- 1/2 tsp fenugreek seeds
- Paneer chaat:
- 400 gm paneer
- 2 Tbsp lemon juice
- 2 tsp dried mint
- 1/4 tsp roasted ground cumin
- Salt
- 2 tsp chaat masala
- 2 Tbsp chopped coriander
Procedure:
To make the chutney:
- Cut the green chillies lengthwise.
- Stir the sesame powder and jaggery into the tamarind pulp.
- Add chili and turmeric powder and salt.
- Simmer for 5 minutes over medium heat.
- Heat 1 tablespoon of oil and fry the mustard and fenugreek seeds for a few seconds, then add the tamarind mixture.
- Heat the remaining oil. Saute the green chilies until tender.
- Add the tamarind mixture to the pot.
For paneer chat:
- Cube cheese.
- Mix remaining ingredients.
- Season and pour over the cheese.
- Cool before serving with chutney.

Chana Chat:
A quick and easy snack that’s good for you. A healthy combination of snakehead fish, peas, potatoes, pomegranates, tomatoes, sesame seeds and some mild spices.
Ingredients:
- 50 gm chickpeas
- 50 gm dark brown peas
- 1/2 tomato, chopped
- 1/2 potato, boiled & chopped
- 50 gm green peas, boiled
- Salt to taste
- 1 onion, chopped
- 2 Tbsp red chilli powder
- 1 green chilli
- 1 tsp chaat masala
- 2 garlic cloves, fried
- Few slices of chicken (optional)
- 1 tsp mint chutney
- 1/2 cup pomegranate
- 2 tsp sesame
- 1 lime for lemon juice
- 2 tsp tamarind extract
- 1 spring onion, chopped
Procedure:
- Take a large bowl and add chickpeas and black peas.
- Chop some tomatoes, onions, and boiled potatoes and put them in a bowl.
- Add some green chillies. Then add boiled peas to the mixture.
- Add salt to taste, red chili powder and curry powder.
- Add garlic cloves, pomegranate, sesame seeds, lemon juice, mint chutney and tamarind extract.
- Mix the mixture well and serve refrigerated.

Egg Chat:
This boiled egg tea combines the goodness of eggs with lots of interesting spices and condiments for a new experience for your palate.
Most healthy people can eat up to seven eggs a week without affecting their heart health. Some people choose to eat only the egg whites without the yolks, which provide some cholesterol-free protein.
Ingredients:
- 3 boiled eggs
- 1 Tbsp tomato ketchup
- 1 tsp tomato chili sauce
- 3 tsp tamarind extract
- 1 tsp lemon juice
- 1 tsp roasted cumin
- Salt to taste
- 1 green chilly
- 1 spring onion, chopped
- 2-3 Tbsp boondi
Procedure:
- In a bowl, mix tomato paste, tomato chili paste, tamarind extract, lemon juice, roasted cumin, green chili and salt
- On a plate, cut hard boiled eggs in half and spread the chutney over the boiled eggs.
- Sprinkle some chopped shallots, curry powder and pudding over the eggs.
- The egg tea is ready to serve.

Chicken tikka chat:
Just like a typical chaat, chicken tikka chaat includes ingredients like tomato, onion, green chilli, imli chutney and more. All we need to do is replace papdi or aloo tikki with chicken tikka slices. Best of all, you can have this delicious snack ready in less than 15 minutes.
Ingredients:
- 8-10 Pieces Chicken tikka
- 2 tbsp Chopped onion
- 1 tbsp Chopped tomato
- 1 Chopped green chilli
- 2 tbsp Roasted peanuts
- Imli chutney, as per taste
- 1 tsp Chaat masala
- 1 tbsp Sev
- 1/2 tsp Pomegranate pearls
Procedure:
- Cut the chicken tikka into small pieces. set aside.
- Put all other ingredients in a bowl (except sev, anar dana and some coriander leaves).
- Mix all ingredients well. Add chicken tikka and mix.
- Garnish with sev, pomegranate and coriander leaves and serve.

Dahi Chana Chaat:

Ingredients:
- 1 Cup Boiled Chickpeas
- 1 medium Boiled potato (cubed)
- 1 large Onion, finely chopped
- 1 medium Tomato, finely chopped
- 1 Green Chilli, finely chopped
- 2 tbsp Coriander Leaves, finley chopped
- 2 cups Curd
- 1 tsp Chilli flakes
- 1 tsp Roasted cumin seeds
- to taste Black Salt
- to taste Salt
- 1 tsp Chaat Masala
- 1/2 tsp Coriander Powder
- 2 tbsp Green Chutney
- 3 tbsp Tamarind Chutney
- 4-5 Papdi
Procedure:
- Put the cooked chickpeas in a bowl and add the chopped onions, tomatoes, potatoes, green chilies and green cilantro.
- Add chili flakes, cumin powder, black salt, white salt and curry powder.
- Add green sweet chutney and mix everything well.
- Now add the curd, crush the paddy and place on top.
- Garnish with green parsley.

Rasgulla Chat:
This chaat features soft and spongy rasgulla topped with yogurt, tamarind sauce, mint and coriander chutney, and a blend of Indian spices.
Rasgulla is not a healthy sweet and is best consumed as a cheat meal. Strongly not recommended for diabetics, heart patients or those who have lost weight.
Ingredients:
- 5-6 Rasgulla
- 1/2 cup Boiled potatoes (cubed)
- 2 tbsp Chopped onions
- A pinch of Black pepper
- 1/4 tsp Cumin powder
- to taste Black salt
- 1/2 cup Sev puri
- 2 tbsp Pomegranate kernels
- 2 tbsp Mint Coriander chutney
- 1 tbsp Tamarind paste
Procedure:
- Squeeze the syrup out of the rasgulla and place them in a separate dish.
- Now add the potato mixture on top of the rasgulla.
- Drizzle with curd, mint chutney, tamarind paste, jaljeera, black salt, chaat masala and other spices.
- Garnish with coriander leaves, sev puri and pomegranate kernels.

Aloo Handi Chat:
This innovative chaat consists of aloe cups filled with boiled chickpeas and served with a tangy and flavorful chutney.They are rich in vitamin C, which is an antioxidant. Potatoes were a life-saving food source in the early days because their vitamin C protected against scurvy.
Ingredients:
- 150 gms Black chickpeas
- 500 gram Boiled potatoes
- 2 tbsp Tamarind chutney
- 1 tbsp Mint chutney
- 2 tbsp Curd
- 1 tsp Chaat masala
- 1 tsp Roasted cumin powder
- 2 tbsp Chopped onion
- 2 tbsp Chopped tomatoes
- 1 tbsp Sev/bhujia
- To garnish Coriander Leaves
- to taste Salt
- to taste Red Chilli
- 1 tsp Dry mango powder
Procedure:
- Take a large container, add the chickpeas and all the spices and stir well.
- Take out the potatoes and scoop out a cup shape from the center.
- Sprinkle some roasted cumin powder and curry powder. Now fill it with spiced chickpeas, put in a dash of tamarind chutney, then mint chutney and tofu.
- Sprinkle with chopped onion, tomato, sev and coriander leaves.
- Do the same with all the potatoes and enjoy the tangy aloo handi chaat!
