For the papdi:
- 200 gram maida
- 40 gram oil

- 1/2 tsp black rock salt

- 200 gram tamarind/tentul pulp (soaked in 1 1/2 cup water)
- 800 gram sugar
- 3 tsp kachri powder
- 1/2 tsp saunth powder
- 1 tsp degi mirch
- to taste salt
- 1/2 tsp black rock salt
- 1/2 tsp garam masala combine with black cardamom, zeera, laung
For the dahi:
- 2 cups yogurt
- 2 tbsp sugar, powdered
- For the chaat masala:
- 2 tsp peeli mirch
- 1 tsp kali mirch
- 2 tsp jeera powder
- 2 tsp garam masala
- For garnishing:
- pomegranate seeds
- Sev
Procedure:
Prepare papdi:
- Mix maida, salt and ajwain in a bowl.
- Add oil. Knead together the flour and oil.
- Form the dough into small balls. Roll them like pancakes.
- Fry these meat sauces on low heat until golden brown.
To prepare meethi chutney:
- Soak tamarind pulp in water for 25-30 minutes. Squeeze it with your hands to extract all the pulp. Strain and discard the residue in the filter.
- Put tamarind water in a saucepan and add sugar. Cook over low heat until the sugarmelts. Let it cool.
- Once it cools down, add kachoori owder, saute powder, chilli flakes, salt, black salt and garam masala.
- Your meethi chutney is ready.
To prepare dahi:
- Whisk yogurt with some powdered sugar. Put it in the cold place.
To prepare chaat masala:
- Mix all ingredients together.
Plating:
- Serve bhallas on a plate. Break it up slightly in the middle.
- Add sweet tofu, khatti chutney, meethi chutney.
- Garnish with pomegranate and sev.
- Sprinkle it with some chaat masala.
- Serve.

To make the chutney:
- Cut the green chillies lengthwise.
- Stir the sesame powder and jaggery into the tamarind pulp.
- Add chili and turmeric powder and salt.
- Simmer for 5 minutes over medium heat.
- Heat 1 tablespoon of oil and broil
